Recipe Report - April 4

First up we have
Yakisoba Chicken Noodles.
We first had these as a freezer meal and everyone loved them! I couldn't wait to make it again. I would like to make it with soba noodles in place of the ramen noodles. (The ramen noodles were convenient.) The chili paste is what kicks up the spice so you if you have someone in your family sensitive to "heat" I would recommend starting with a little and adding more for taste. This reheats great which is good since it makes quite a bit.

Cucumber Sauce
We love to serve this with fish. Any kind of fish. It is a great alternative for those who do not like tartar sauce. I enjoy it so much I like to eat it with a little fish on the side. Yes, I just admitted that.

Chicken Jambalaya
This was tasty, tasty. PE got a tad carried away with the chicken bouillon and it was a titch salty, not unbearably so which was good because who doesn't hate it when salt ruins a meal. I have done it once and now I err on the side of caution to the point that we need to keep salt on the table for adding flavor.

Steamed Vegetables
Okay, so most people know how to steam vegetables. I thought I did. Then I started doing the following and it made them so much better. Boil the water then put the steamer over the boiling water and sprinkle the vegetables with kosher salt. So simple. So delicious. I don't know why that made such a difference but it was better than when I put the vegetables in the pan with the cold water and then bring it to a boil.
