I am only recapping two recipes this week because a thing bigger than that just came to my attention. That thing is Bug's ACT score. That kid is s.m.a.r.t. He scored a 35 on his ACT. That would be out of 36 (just in case you didn't know). Yup. We have a smart kid. Okay so I contributed nothing to his DNA but that doesn't mean I can't be SUPER proud of him and claim him as my kid. Way to go Bug!!!
We will continue on with the Bug theme since the two recipes are from his birthday dinner.
Taco Casserole
This is his favorite meal. He asked for it last year as well. Everyone in the family enjoys it. The green beans, corn, and tomatoes are all to taste. For the green beans and corn you can use fresh, canned, or frozen. This is so versatile that you can modify the vegetables to your liking. (Don't like green beans? Add carrots instead.) Have fun with it and enjoy.
Peanut Butter Chocolate Molten Cake
Bug requested chocolate molten cake. I decided to change it up a bit with the addition of peanut butter. I mean really . . . how could you go wrong? Chocolate and peanut butter together are always enjoyed in this house. It was delicious! Everyone enjoyed it. PE even ate it . . . he does not enjoy the regular chocolate molten cake.--too chocolaty or something. I served it with vanilla ice cream. Yummy, yummy, in my tummy! Bug loved it and did not have a preference one over the other.
