We have enjoyed quite a few meals from the freezer meal group over the last couple months. I have misplaced a couple recipes with the help of others in the house who don't always put them in a "safe" place when the recipes are removed from the top of a meal. Oh well. I will be posting those that I do have over the next week or so. The three below are all include chicken.
The Barbecued Chicken was delicious. . .it is sort of the perfect way to eat chicken on the bone--marinated then grilled. The chicken packets were also delicious. I took them to KLB's one night and we ate them with Chicken Rice-a-Roni. PE, Moo, and Bob at the Chicken Lelani one evening when I was not home and they all enjoyed it.

Barbecued Chicken

1 can (12 oz) cola
1 can (6 oz) tomato paste
2 Tbsp onion, finely chopped
1 Tbsp red wine vinegar
1 Tbsp Worcestershire sauce
1/4 tsp salt
2 broiler/fryer chickens (3 pounds each), cut in half
In a small saucepan, combine the cola, tomato paste, onion, vinegar, Worcestershire sauce, and salt. Bring to a boil. Reduce heat; simmer, uncovered for 15 minutes. Set aside 1/2 cup for basing; cover and refrigerate. Carefully loosen the skin of the chicken; brush remaining sauce under skin. Cover and refrigerate for 30 minutes. Prepare grill for indirect heat, using a drip pan. Using long-handled tongs, dip a paper towel in cooking oil and lightly coat the grill rack. Place chicken over drip pan and grill, uncovered, over indirect medium heat for 25 minutes on each side or until chicken juices run clear, basting occasionally with reserved sauce. Thaw overnight and grill.

Chicken Packets

2 cups chicken, cooked & chopped
3 oz. cream cheese, softened
1 Tbsp copped chives
2 Tbsp milk
salt to taste
1/2 cup crushed, seasoned crouton crumbs
2 pkg. crescent rolls or homemade
1/4 cup melted butter
Mix chicken, cream cheese, chives, milk, and salt in medium bowl (mixing with hands works best) to make filling, and store in a 1 qt. freezer bag. Put crouton crumbs in another bag, attach to chicken filling and freeze. Refrigerate crescent rolls. To prepare for serving, thaw chicken mixture. Unroll crescent rolls into 4 rectangles of dough. Press along perforation so that the halves will not separate. Place chicken filling mixture into the center of each rectangle. Fold dough over the filling and pinch edges to seal tightly. Dip each packet in melted butter and coat with crouton crumbs. Place packets on baking sheet. Bake in preheated 350 oven for 20 minutes or until golden brown. Packets are good hot or cold. Sever with mashed potatoes and chicken gravy and green salad or vegetables. Save broth from cooking the chicken to make the gravy.

Polynesian Chicken Lelani

4 large boneless chicken breasts, cooked and chopped into bite size pieces
2 cans of cream soup, any kind
2 cups evaporated milk
1 cup celery, minced
1 cup green onions, sliced
1/2 tsp Worcestershire sauce
1 cup almonds, slivered
2 cups Asian crunchy noodles
1/4 cup cheese, shredded
Blend soup and milk together. Add celery, green onions, Worcestershire sauce, and almonds; stir together. Place Asian noodles in bottom of 13x9 inch pan. Place chicken on top. Pour sauce over chicken. Sprinkle w/cheese.
From frozen: Thaw completely, remove foil and wrap and bake at 350 for 45 minutes.
