Freezer Meal Group - September

While not guaranteed this will probably be my last freezer meal grilling recipe for the season. I have loved the simplicity of preparation related to these meals. I do plan on continuing to find recipes that require little to no cooking on the day of prep--that is the lazy in me. I would like to think my no-prep-day-cooking meals are no less enjoyable than those meals that are cooked on prep day. I guess if they are then someone should tell me and I will do better.

Anyway, this month's recipe is another grilled chicken recipe. While bone-in chicken had previously been far from my favorite, I do think that marinated and grilled is one of the two best ways to eat it. (The other way is from KFC.) As I cook/bake more and expand my thoughts on various types of food I am sure my eyes will be opened to other foods that I may not have the highest opinion of. For example, bone-in chicken. . . I had NEVER purchased uncooked bone-in chicken prior to this summer and I am sure glad I finally caved and did it. I have not eaten this chicken yet since Hunting W. is gone for the week hunting and grilling is his thing. Mainly because he is good at and enjoys it and partly because he grills, I bake, we both cook. If I had to I could grill just the same as if he had to he could bake but we mainly just go with the flow and stick to what we are good at.

Finally, the recipe.

Grilled Citrus Ginger Chicken

6 chicken thighs/breasts
9 Tbsp orange juice
6 Tbsp soy sauce
2 1/4 Tbsp rice vinegar
1 Tbsp ginger root, grated
1 1/2 Tbsp garlic, minced
2 tsp red peppers, crushed

Combine all ingredients and pour over chicken. Refrigerate for 30 minutes or up to 8 hours. Grill chicken on a well oiled grill until well browned on all sides; meat near bones should no longer be pink when tested with the tip of a knife and/or innermost temperature should be 165.

Freezer Instructions
Once marinade and chicken is combined in zip top freezer bag, place in freezer. To prepare, defrost in refrigerator over night then grill as directed above.
