Salsa Meatballs Strike Again

I made meatballs so we could have Salsa Meatballs again. While the Salsa Meatballs recipe says it would be good on chicken and that was tempting I had time and decided I would make some meatballs. Below is what I threw together to go with the sauce.

They were easy to make even though it made a lot. I used my smallest scooper for the meatballs. It works great and makes them the perfect size for PE to eat a one in one bite or for Moo, Bob, and I to cut in half and eat in two bites.

2 lb hamburger
1 lb bulk sausage
6 Tbsp minced onion
1 1/2 cups quick oats
1 1/4 cup milk
2 tsp Kosher salt
1 tsp black pepper
flour (optional)
canola oil (optional)

Combine all ingredients except the flour and canola oil. Once combined roll into medium-sized balls and place on a cookies sheet. Place cookie sheet in the freezer for 5 to 10 minutes. Remove meatballs from freezer and OPTION 1 - dredge in flour then cook meatballs in canola oil just until brown. OPTION 2 - Place frozen meatballs on a roasting pan or a rack placed on a baking sheet and bake for 15 to 20 minutes. Continue with whatever recipe needs meatballs OR freeze for later.
