I received the Salsa Meatballs recipe the other day. You must go make them. NOW! (If you don't want to eat meatballs, read the other options.) Before you can have the recipe I have to tell you about another freezer meal we had recently. We ate Tortellini Soup. It was delicious. We did have to fix it a little after I sort of simmered out most of the water. Oh well, crap happens.

Salsa Meatballs

3/4 cup mild salsa, well drained
3/4 cup ketchup
3/4 cup firm packed brown sugar
1 Tbsp Worcestershire sauce
1 tsp salt
1 tsp pepper (adjust this to taste)
1 tsp minced garlic
1 small onion cut into wedges or minced onions)
1 tsp chili powder
1 dried bay leaves
2 1/2 lb chicken or beef
Preheat oven to 350 degrees. Combine all ingredients except the meat. Add meat and coat well. Place meat in deep dish baker or a slow cooker and pour excess sauce over top. Cover with foil and bake for 1 1/2 hours. Uncover and bake another 30 min. This recipe is meant for bone in chicken but can be used for meat of preference.

Tortellini Soup
from Freezer Meal Swap

1 lb ground beef - browned, seasoned, and drained
1 bag Normandy style vegetables
1 can corn
1 (46 oz) can tomato or vegetable juice
1 qt stewed tomatoes
1 qt water
1 bag tortellini
seasonings, to taste
Place everything except tortellini in slow cooker or stock pot. Heat until bubbling then add tortellini 10 minutes before serving.
From frozen: Defrost overnight in the refrigerator. Heat through. Add tortellini 10 minutes before serving.
